I know, some of you are wondering how I can call myself a Pit Master. But, the way I am looking at it, I am the master of my pit. Admittedly it isn’t necessarily a Pit, but it is a damned fine Weber Smokey Mountain. I have two of them, one of the small ones and one of the middle-sized ones. In addition, I have a Weber six-burner summit gas grill for when I just can’t be bothered to get the coals going.
I am also a BBQ Chef at Hillmount Garden Centre in Belfast. Here we run courses once or twice a month mainly showing people how to grill. They come for three hours and in that time they will prepare and cook a three-course meal on either a Gas or Charcoal grill.
